I love eating cereal and will often eat if for lunch if I had something else for breakfast, and sometimes I eat it for both meals.
I have made this Muesli for quite a while (although not recently by the state of my Rancid Bran) and its Mum's recipe, but I mix it up just a little, and this time got rid of the oil, I usually use Canola, and swapped it for Coconut oil instead.
The quantities are very flexible, I obviously had no bran, so used extra rolled oats instead, and I always add as much fruit and nuts as I want too, after all, they make it delicious. You can of course substitute for ones you like.
Deluxe Toasted Muesli
1/2 c coconut oil
1/2 c honey
7 c rolled oats
1 c coconut
1 c bran flakes
1 cup wheatgerm
1/2 c oatbran
1/2 c sunflower seeds (I used pumpkin too)
1/2 c chopped nuts (I use cashews and almonds)
1/4 c sesame seeds
1 t cinnamon
1/2 c raisins
1/4 c dried pineapple ( I also add papaya)
Heat oil and honey together. In a large roasting dish combine the oats, coconut, bran, wheatgerm, oatbran, seeds, nuts and Cinnamon.
Pour over the oil and honey and mix well to combine.
Bake at 130degrees for 1 hour, stirring regularly,
When cool add dried fruit. Store in an airtight container.
Makes 13 cups (Mine fills a 4.2litre container)
I love mine with fresh fruit and yoghurt - YUM!
Yum! Mr Myrtle is out main muesli maker - although in the winter I'm very much a porridge girl :)

ReplyDeleteI just made my own granola for the first time after you mentioned the blog 100 days of real food. I followed her recipe. Goes excellent with yogurt and fruit.
